Love almond joy candy bars? Try this pudding recipe!
This is my latest addiction! Who knew simply mixing chia seeds with almond milk would create such a delicious and healthy pudding? There are so many ways to enjoy this. You could make it as a power breakfast bowl with berries and sliced nuts, or dessert with coconut and chocolate. I've written about chia seeds before, but I cannot get over how beneficial they are! Chia seeds are loaded with protein, antioxidants, fiber, omega 3 fatty acids, and other essential vitamins and minerals. Consuming chia seeds is beneficial because they lower cholesterol, aid in weight loss (nearly all the carbs in them are fiber), fight free radicals that contribute to aging and diseases such as cancer, they lower the risk of heart disease and type 2 diabetes, and help keep your bones strong and healthy!
1 quart unsweetened original almond milk (coconut milk is fine too!)
1 cup chia seeds
2 tsp pure almond or vanilla extract*
pour almond milk into tupperware, then stir in chia seeds and almond extract. put the lid on the tupperware and place in the refrigerator over night.
that's it! Super easy and healthy!
toppings: sliced almonds & berries, diced apples & cinnamon, shredded coconut, sliced almonds, & cocoa nibs, banana + cocoa nibs, etc.
*use vanilla extract if you want to use toppings such as apples, cinnamon, maple syrup, banana, etc. use almond extract for toppings such as coconut, almonds, berries, etc.
